The venison (deer meat) you buy in our Vancouver butcher shop is from small farms where they are fed in pastures naturally grown grass and hay. Grain is sometimes added to their feed. The venison is not treated with antibiotics or growth hormones.

Venison is a very lean meat and quite dense with about 22% fat as compared to 33% for beef and 35% to 45% for lamb. The blood line of a deer provides a rich, dark colour to the meat, and the meat itself is darker than most other meats. Some people prefer venison as it is more flavourful than beef and pork, with a distinctive “wild” gamey taste due to the diet and environment of the deer.

Venison contains more polyunsaturated fats and monounsaturated fats (healthy fats) than most conventional red meat which studies have shown to lower risk of heart disease.

Due to how lean and dense venison meat is, it often requires adding a bit of extra fat for cooking and reduced cooking time. Since venison is such a dense meat, smaller portions can be served to gain the same nutrients as larger cuts of beef.
